Ingredients
  

  • 2 lbs Ribeye or sirloin steak notes: thick cut, about 1-2 inches
  • 1/2 cup Beef broth notes: for moisture and flavor
  • 4 tbsp Unsalted butter notes: melted
  • 4 cloves Garlic notes: minced
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Paprika
  • 1/2 tsp Dried thyme
  • 1/2 tsp Dried rosemary
  • 1 tbsp Worcestershire sauce
  • 1/2 lb Baby potatoes notes: halved
  • 1 small Onion notes: sliced

Instructions
 

  • Sear the Steak (Optional): Heat a skillet over medium-high heat and sear the steak for 2 minutes per side until browned.
  • Prepare the Slow Cooker: Place baby potatoes and sliced onions at the bottom of the slow cooker.
  • Season the Steak: Mix salt, pepper, paprika, thyme, and rosemary. Rub over the steak.
  • Add Ingredients: Place the steak on top of the potatoes and onions. Pour in beef broth and Worcestershire sauce.
  • Add Garlic Butter: Mix melted butter with minced garlic and drizzle over the steak.
  • Slow Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until tender.
  • Serve: Remove steak, let it rest for 5 minutes, then slice. Serve with potatoes and onions.

Notes

For extra flavor, broil the steak for 2-3 minutes after slow cooking.
