Ingredients
  

  • 1 Medium sweet potato notes: peeled and diced
  • 1/4 cup Water notes: or more for desired consistency

Instructions
 

  • Peel and dice the sweet potato into small cubes.
  • Place the sweet potato cubes in a steamer basket over boiling water and steam for 12-15 minutes, until soft.
  • Transfer the cooked sweet potato to a blender or food processor.
  • Add 1/4 cup of water and blend until smooth, adding more water as needed for desired consistency.
  • Let the puree cool before serving.

Notes

Store leftover puree in an airtight container in the refrigerator for up to 3 days or freeze in small portions for up to 3 months.
